Black garlic comes from the "fermentation" of white garlic (enzymatic browning) which gives it its black color. It has a sweet and pleasantly smoky taste.
Its strong smell and caustic taste have disappeared during the browning process.
The beneficial properties of garlic as an edible product but also as a dietary supplement have been known for many years. Black garlic, of course, is not unknown in Greece. Historical sources have confirmed that the ancient Greeks consumed black garlic before the battle and especially the Spartans.
It has strong antimicrobial activity, contains the substance allicin that causes dilation of the arteries and has a strong antioxidant capacity. A real superfood which through the aging process acquires all the unstable substances contained in the original fruit in a stable substance, thus giving black garlic truly excellent properties!
It contains the substance L-Allycysteine which is soluble in water and has almost twice the activity of allicin of plain garlic, thus making it the most powerful ally against hypertension. L-Allycysteine gives black garlic very strong antioxidant properties, almost 4.5 times more than plain garlic, with measurable results on the TEAC scale. It also drastically reduces endogenous peroxidation levels. These results come from an animal study by the Korean Society of Nutrition, which dates back to 2009.
Other laboratory studies confirm its anti-cancer properties, as its administration to cancer cells caused inhibition of their proliferation, affecting the modification of the cell life cycle and causing their apoptosis.
It is not indicated to be consumed by people who have low blood pressure, suffering from immunothrombocytic purpura and haemophilia people. No allergic reactions from eating black garlic have been established.
