Many will associate Crete primarily with sun, sand and sea. Crete is located in the southernmost part of Europe. The long periods of sunshine encourage growth and flowering for most of the year. The hills and mountains with their unique flora often begin right behind the beach. These mountains quickly reach 1,000 to 2,000 meters above sea level. This is where the unique mountain herbs and plants that hardly exist in our country thrive. A multitude of aromatic and wild-growing plants and herbs such as thyme, sage, pine and diktamo characterize the landscape and are a source of food for the bees. This rare biodiversity of native Cretan plants and herbs, the aroma and the unmistakable taste essentially characterize the Cretan thyme honey and make it one of the best in the world in terms of quality and taste.

The name Yakinthos = hyacinth

Agios Yakinthos, the saint of love in Crete. We all know Valentine's Day, the festival of love. But how many people know that in Crete the Day of Love comes many months later, on July 3rd, the festival of the sacred hyacinth, known here as Agios Yakinthos? And this festival of love is centuries older than Valentineäs day.

Storage:

- Cool so that it doesn't separate. A temperature of four degrees is ideal - but then the honey is hard and cannot be spread. The honey practically does not change below 15 degrees. Honey lovers who use up their honey quickly can also store it at room temperature or in the kitchen cupboard. However, if the honey is stored longer than 18 degrees, it can separate: a solid phase of sugar crystals then forms at the bottom and a liquid, dark layer at the top. This contains water, fructose and other components. Due to the higher water content, this phase begins to ferment faster.

- Dark because light destroys the enzymes in honey. Then the honey loses its disinfecting effect, among other things. The vitamins also suffer from exposure to light.

- Dry because honey attracts water and it can ferment that way. Always seal glasses or hobbocks airtight. In addition, honey can take on foreign odors through moisture.
