Here they create great density pastes & sauces with sweet red (Florina) pepper as their main ingredient. They are prepared during September & October when the peppers are ripe in Western Macedonia. The peppers are charcoal-grilled, peeled, seeded by hand & after they are ground, they simmer for hours in pots together with the rest of the ingredients. Extra virgin olive oil is used in all their recipes whose common characteristic is the unique smoked flavour of charcoal-grilled pepper. The high degree of ingredient density, between 70% & 80%, makes the spreads special & brings out their taste & fragrance. Their ingredients & their preparation are based on traditional & family recipes from Florina & Pella.
In this recipe, the charcoal-grilled sweet red (Florina) pepper is the only "star". With the addition of paprika powder & hot green pepper, they create a particularly concentrated & slightly spicy paste of exquisite texture & pure rich flavour of smoked pepper & an after-taste of paprika powder. Serve as a dip, appetizer, bread spread, meat or main course side dish.
