Ascordoulaki are the perfect and healthy meze for tsikoudia (Raki)!

Ascordulaki are edible bulbs deeply hidden down in the earth. It is a natural product of Crete and is not missing from any house on the island. Enjoy them as a Meze with just a little olive oil
.
They are bulbs of the species Muscari comosum and grow deep into the soil at the beginning of winter. There are in total 19 species and subspecies of the genus Muscari of which 9 are found only in Greece.

They leave a bittersweet taste when eating! Of course, in order to reach this result, a time-consuming process is needed. At first we clean them trying not to "injure" them. This helps to remove bitterness more easily. Then we place them in a tulle so that they do not detach and dissolve during the peeling. Then we put them in a pot with water and boil them for 15 minutes. Once the time of 15 minutes has passed, remove the pot from the heat and let the water cool. When it has cooled, we change the water to cold and start boiling again for another 15 minutes. We do this process 4 to 5 times.
